EGG PAROTTA
ITEMS NEEDED
- Onion - 1
- Tomato - 2-3
- Green chilli - 2
- Grated carrot - 3 tbsp
- Capsicum - 3 tbsp
- Corn - 2 tbsp
- Curry leaves
- Mint leaves - 2 tbsp
- Egg - 3
- Chilli powder - 2 tspn
- Turmeric powder - 1/2 tspn
- Coriander powder - 2 tbsp
- Garam masala - 1 tspn
- Cumin powder - 1 tspn
- Salt - as needed
- Parotta - 4 to 5
- Cinnamon sticks - 2 pieces
- Cardamom - 2
- Bay leaves - 1
METHOD
Cut parotta into bite size pieces. Heat oil in a pan, add cinnamon, cardamom, bay leaves, fry for few seconds. Add curry leaves, onion, green chilli and fry until raw smell goes away. Now add tomoato, fry until smashed. Now add carrot, capsicum, corn and fry it for few seconds, add all masalas & salt, mix it until raw smell goes away. Now add eggs and mix it. Once it is half cooked, add parotta pieces and coat it well. Serve with onion carrot raitha.
