BRINJAL AND PEANUT GRAVY

ITEMS NEEDED
Onion -1
Tomato -1
Garlic -5 pods
Brinjal -4
Peanut -1/2 cup
Sambhar Powder -3 tbsp
Turmeric Powder -1/2 tspn
Tamarind -1 medium lemon size 
Salt as needed
 
FOR TEMPERING
Gingerly Oil-3 tbsp
Saunf -1/2 tbsp
FenugreekSeed -1/4 tspn
Hing -little
CurryLeaves.
METHOD
Soak tamarind in 1 cup of water with salt and make puree from the tamarind,add turmeric powder and sambhar powder and mix well.cut the brinjal in to four ,heat oil in a pan add saunf and methi seed,curry leaves once temper add onion,garlic and tomato fry it well,now add brinjal and peanuts fry it for few seconds,now add tamarind puree and cook it until gravy thicken and oil floats on top.Serve it  with rice.
